Waltham Butternut

Description

(C. moschata) An old reliable favorite. Good yields with excellent-tasting, rich, orange-coloured flesh. Delicious baked or roasted.

Butternuts can also be harvested unripe - i.e. as 'Baby' Butternut, not something you would usually find in your local grocery store - and then prepared as you would any of the Summer Squash. Try slicing the baby green butternuts, drizzle them with a little olive oil, sprinkle salt and pepper and a little shredded parmesan cheese on top and then bake them. Harvesting them young will also keep the plant producing. 100 days.
