Description

(Levisiticum officinalis) A hardy, erect, perennial plant with flavourful dark green leaves and yellow flowers. The leaves and seeds are used for flavouring stews, soups, salads, pickling and more. Nice celery taste with a hint of anise. Roots and young stems are also edible. Young stems can be cut, peeled, and used in salads. Stems are smooth, hollow and thick and the plant grows to 1.8 to 2.5 m tall.

Start seed indoors 6 to 8 weeks before transplanting to the garden. Sow seed 1/2cm deep in sterile seed starting mix with a warm soil temperature. Transplant seedlings outdoors after your last frost. Plant in a sunny or lightly shaded location in well drained soil amended with rich compost or a general garden fertilizer. To harvest leaves, cut back the stems before the blooms form.

Attracts Beneficial Insects: If allowed to flower, provides pollen and nectar for beneficial insects such as bees, hoverflies, lacewing larva, lady beetles, parasitic wasps, and tachinid flies.
